I wake up every morning thanking the universe I met this man.  He is my hero and soul mate.

I want you all to meet my man, Cameron.

    Hi Erica,
    I have been trying bacon because of your blog. Was repelled for a long time, thought it was really bad food.
    My wife found some at Trader Joe’s that is nitrate free so I have been eating it as a source of fat. Have been thinking my failures in past with low carb had to do with not embracing eating fat. I am now eating bacon and a lot of mayo. Through reading Dr.Carlson I realize the mistake I was making was thinking fruit was a healthy alternative to carbs. Now I understand that for me at least fruit is out.
    I am serious about low carb not so much for weight, though I would like to lose 10 to 15 lbs, but because of blood work. Had been doing well on my version of low carb but my doctor had me on statins. When I stopped the statins ldl’s shot up so I stopped low carb which caused tgl’s to skyrocket, and hdl’s to drop. Now I am back on course hoping to see huge improvement of higher hdl’s and lower tgl’s. Not worried now about ldl’s.
    I have for years been working to keep blood pressure normal without meds. Do you think the salt in bacon could bad for me since I am trying to control my BP.

    baaaaacon….makes everything good, from your plate to your lipid panel!
    I eat bacon almost everyday of my life. I get the nitrate question alot when I tell people about my blog. I think nitrates are benign at worst and beneficial at best.
    It’s funny how the nitrates in bacon are considered bad but the same substances found in plants like arugula, watercress and lettuce are considered healthful.

    As for the salt content, I don’t worry too much about that either. If you’re not eating tons of packaged food and you stay LC I think you’ll be fine. I always salt my food because it tastes better but it’s also an important source of iodine, an important nutrient found mostly in seafood.

    Thanks for the links. I love to go against conventional wisdom. Fruits and veggies good, whole grains so good for us. Fat Is bad. Trying to get my wife to read Dr. Carlson’s book so she can begin to question CW.I did want to embrace bacon but have had two bad BP two weeks in a row. Not exceedingl high but borderline high. 138/80. Could be something else but this week I am going bacon free and see if it makes a difference. If it goes back to normal will try bacon again and see what happens. I eat zero processed foods but I do eat a lot of canned salmon which does have a lot of sodium.
    I am 58 so I probably have different salt issues than a younger person.
    So far other than the BP everything is great. I have been extremely low carb. Have lost about 4 lb. In the last month. Only carbs are a few squares of 85 % dark chocolate daily and some veggies in my morning omelet.

    Canned salmon and chocolate….I could live off those!
    Congrats on the weight loss Bob. Please tell us about your bacon free week. I’m very curious to know if your bp numbers go down significantly.
